CHICAGO (September 17, 2026) – Hyatt Hotels Corporation (NYSE: H) announced the opening today, in the heart of Canadian wine country, of The Clayfield, a one-of-a-kind boutique wine-and-wellness hotel inspired by its setting in Niagara-on-the-Lake.
Whether you are an oenophile looking to explore the vineyards, eat extraordinary food or relax with clay based and wine inspired wellness treatments, The Clayfield is a destination in and of itself. Drawing inspiration from Niagara’s vineyards, taking its name from the clay-rich landscape, and deeply linked to the town’s creative community, the property encompasses inspiring architecture, destination-led dining and wine-influenced wellness and personal, considered hospitality, providing a sophisticated base from which to experience the region every season of the year.
The Clayfield presents a refined contemporary expression of wine-country living, fusing the artistic spirit of the locale with the charm and character of Old Town Niagara, and the timeless romance of the vines.
The winemaker and the community-builder
The Clayfield brings together the creative ambitions of two local Niagara families – the Feldbergs and the Hawleys.
For David Feldberg, founder of Stratus Vineyards, the seeds for The Clayfield were planted after opening his family winery, where design and hospitality are as much a part of the visitor experience as the wines themselves. Feldberg saw the potential for a hotel guided by the same philosophy as the vineyard – the translation of landscape into experience.
In parallel, John Hawley and his family were completing an award-winning New Urban neighborhood with a village center now known as Clayfield Commons. When Hawley and Feldberg met in 2019, they quickly discovered how closely their ideas aligned. Their shared values and passion for excellence, creativity and design created an ideal blend. Together, they could realize their respective visions while creating something greater than either could have achieved alone.
Inspired by Niagara
Conceived by Montreal-based Sid Lee Architecture, the design of The Clayfield embodies sculptural forms and sweeping curves inspired by the region’s escarpment. Slender vertical timber elements echo the orderly rows of neighboring vineyards. The outcome of the building feels both unexpectedly novel and unmistakably connected to its setting.
Rather than relying on traditional wine country motifs, the design interprets Niagara through material, light, landscape and craftsmanship. Floor-to-ceiling windows bring the surrounding vineyards, gardens and changing skies into the hotel, while warm oak, natural stone, woven textiles and richly layered textures create interiors that are sophisticated, tactile and welcoming.

Stay, Savour and Unwind
Dining and social spaces extend throughout the hotel, including The Rooftop at The Clayfield, Niagara-on-the-Lake’s first rooftop patio, serving cocktails and small plates looking out over the vineyards.
The Clayfield hotel’s culinary offering is anchored by Terrain, a contemporary wine country restaurant from The Ascari Group. Rooted in the landscape and seasons of Niagara, and led by Executive Chef Joel LaBute, the restaurant celebrates the region through produce-driven cuisine, relationships with local growers and producers, and a wine program that places Niagara’s leading wineries and small-lot producers at its heart. Terrain encompasses an 80-seat main dining room, 25-seat lobby bar, and intimate Chef’s Table creating a destination for locals and visitors to experience the food, wine and character of Niagara. The full-service spa will also take its cues from Niagara’s mineral-rich clay landscape, as well as its wine culture, with clay-based treatments including body rituals and vinotherapy.
For meetings and events, more than 5,400 square feet of flexible space encompasses an elegant ballroom with state-of-the-art audiovisual capabilities, accommodating everything from intimate executive gatherings and private dinners to larger meetings and celebrations.
The Vision for Clayfield Commons
Clayfield Commons brings together an existing grocer, bank, drug store and medical center with a growing collection of independent retailers, makers and creators, restaurants, a café and neighborhood services surrounding a landscaped public green. The foundational aim is to showcase the character and creativity of Niagara’s entrepreneurs, with businesses including The Garrison House Restaurant, LoveBee Natural Products, The Organic House Chocolate Co., Bloom & Co., Handmade Presence, Southern + Bel Restaurant, and Oliv Tasting Room, alongside the much-loved long-running weekly seasonal Farmers’ Market. Together, with more to come, they create a vibrant new place to shop, dine, gather and explore Niagara.
