Bengaluru, May 2018 – Shangri-La Hotel introduces Shimomura Kazuya as Japanese Head Chef at their celebrated, authentic yet contemporary Japanese restaurant, Yataii. A Japanese national who was born, trained and practiced in Tokyo, Chef Shimomura brings close to two decades of culinary experience from Japan to the city of gardens, Bengaluru.
A dynamic chef, Shimomura in his tenure of working with authentic Japanese restaurants and luxury hotels has gained distinctive culinary skills. He specializes in making and serving Japanese specialty tempura and also masters the art of curating Kaseiki, a traditional multi-course Japanese dinner. He is also an expert in preparing hot dishes and grilled foods in Robatayaki or Kyoto style.
He will showcase his extensive knowledge of Japanese cuisine while he leads Yataii’s kitchen with an endeavour to ensure that guests relish an authentic and consistently high-quality culinary experience. In addition to his expertise in authentic preparations and menu planning, he also possesses strong leadership skills, with experience in training and motivating culinary associates to work together as a team.
